Mediterranean Lamb Pizza

  • 1 lamb fillet (approx. 150g)
  • 4 small round pita bases
  • 1 large zucchini peeled into thick ribbons
  • 8 cherry tomatoes, halved
  • Jar green pesto
  • 75 grams pizza cheese
  • 80 grams of ricotta
  • 1 tablespoon roasted pine nuts
  • Fresh basil to garnish
  1. Preheat your Pizza oven.

  2. Heat a frying pan on high, add a little olive oil and season the lamb and add to the frypan and cook for 2-3 minutes each side, set aside on a plate to rest under tin foil for 3 minutes, thinly slice across the grain.

  3. Add zucchini to the frypan for 3-4 minutes until tender, place in a bowl.

  4. Spread the Pita with pesto, sprinkle with cheese and top with zucchini, tomato, lamb and ricotta. 5. Bake two at a time in your pizza oven on setting ‘’3’’ for approx. 3 minutes.
