Herb and Parmesan Crusted Rack of Lamb

Instructions

  1. Remove the lamb from the fridge 30 minutes before cooking to allow for even cooking.
  2. Combine all the ingredients for the herb and parmesan crust in a bowl.
  3. Sprinkle the salt all over the surface of the lamb cutlets.
  4. Brush the fatty surface and sides of each lamb rack with the Dijon mustard.
  5. Press the crumb firmly into the mustard, then place into the air fryer drawer on top of the frying tray, crumb side up.
  6. Spray the surface of the lamb with cooking oil.
  7. Select the (MEAT) function, then adjust the temperature to 180°C and adjust the time to 25 minutes. Press (START/STOP) to start the function.
  8. Once function is complete and lamb is cooked, remove drawer from the air fryer and leave the lamb to rest in a warm place for 1O minutes before carving. Enjoy!
